This is our first year purchasing from José Olivio Villatoro Castillo, a 90-year-old producer whose grandparents planted the farm in 1850. Olivio's grandson, Eduardo Herrera Villatoro, discovered the specialty market a year ago and is working to improve the farm's post-harvest processing.

Catuaí, Caturra and Bourbon cultivars grown at 1500 MASL in the Huehuetenango department; hand-picked; floated; pulped; fermented under water for 60 hours in tiled tanks; fully washed; and dried on shade-covered patios.
