The “monsooned” process was discovered by accident in the days of sailing ships carrying coffee beans from India to Europe. During the long voyage, the coffee beans were exposed to monsoon winds causing the beans to change color and characteristics, acquiring a whole new taste.

This pale gold coffee bean with the distinctive taste is created today over a 12-16 week process during the monsoon season. After the cherries are handpicked, washed, and dried in the sun, they are brought to the monsooning center located on India’s southwest coast. Here, the beans are spread to absorb the flavor of the monsoon. The green beans are repeatedly raked and turned to ensure uniform absorption of moisture, swelling to almost twice their original size, and turning a pale gold color.
