This chocolate-bomb of a coffee from southern Mexico’s Nuevo Paraiso coffee station. The fine folks at Red Fox sent a sample of this coffee along with a recent pack of samples from upcoming Peruvian harvests. While this lot wasn’t on my radar prior to sampling, we kept returning to it on the cupping table over all the lots we were actually setting out to sample.

It wasn’t the brightest cup on the table, but it stayed so wonderfully sweet and structured over the course of 45 minutes, and more than anything, it just kept tasting like chocolate. This coffee is a cozy weighted blanket of deep sweetness, with subtle dark plum notes around the edge and a very mild acidity.
