Intense dark chocolate ganache and raspberry are the throughlines of this wonderful naturally processed Pacamara coffee.
Located in the Dipilto-Jalapa mountain range in Nueva Segovia, Nicaragua, Finca La Bendicion consists of 105 acres of coffee planted in a biodiverse conifer forest with loose sandy soil and abundant humus. This year’s Bendicion lot kicks the acidity up a bit compared to last year's offering, although the sweetness stays very intact through the aftertaste. While it isn’t a pucker-up tartness by any measure, the roast profile was shortened just a pinch vs last year to coax a bit more fruitiness out of the cup.
