This is our second purchase from 8 contributing producers of the SIPROCAFE association of Amatenango de la Frontera, a famous coffee growing region of Mexico on the border of Guatemala renowned for producing high quality coffee.
Typica, Catuaí, Bourbon, and Garnica coffees grown using organic methods at 1500 meters; selectively hand-picked and sorted for ripeness; pulped; fermented in tile tanks dry for 16-20 hours; washed; dried on patios; decaffeinated using the Water Mountain Process; dried for export.
What we taste: edge-of-the-brownie-pan chocolate, honey, cherry/nectarine finish.
