High in the mountains of east Huila, Román Rodriguez and his three sons eschew many of the newer coffee varietals and processing trends, focusing their efforts at Finca Betania and Villa Esperanza instead on what they know best: meticulous washed production of traditional Colombian varietals.

Expect a very clean cup with lots of chocolate and caramel that reveals a complex but unaggressive herbal acidity as it cools. Hints of sage and mint poke through the sweetness, though never taking the foreground, and a long aftertaste invites the next sip.
